WHY OUR FAMILY LOVES BERKSHIRE PORK

Berkshire pigs are a breed of pigs that are known for their high quality meat.

Pork from Berkshire pigs is dark crimson pink, firm, and heavily marbled (flecks of fat inside the meat) so the meat stays moist when cooking, without the added water or brines found in most pork cuts in your local supermarket.  The meat has a unique flavor that will keep you looking forward to the next time pork is on the menu.

Like most farmers, we take pride in the livestock we raise and the crops we grow.

Every farmer uses the production system that fits their farm the best.  On our farm we have a hoop barn, a traditional red barn and a herd that is small enough to utilize those facilities.  We farrow (deliver) the piglets in the "maternity suite" farrowing room in the old barn.

 

Why do the pigs get penned up to farrow?  It's not because we are mean, its to ensure that both the sow and her piglets are in the safest environment possible during this critical time from farrowing to weaning.  We are able to maintain an optimum environment for the pigs during this early stage of life. We also don't want any outside critters making a meal out of our piglets. Once the piglets are weaned and big enough, they move to outdoor pens or the hoop barn with the rest of our herd. 

For the next five months, we feed the weaned pigs corn from our farm mixed with soybean meal and mineral from the local feed mill until they grow to a market weight of about 280lbs.  Thats when the pigs get delivered to the meat locker and eventually to your table.  (And we may or may not use what they leave us behind to grow our giant pumpkins...)

DO WE USE ANTIBIOTICS?

Only if our pigs get sick

Antibiotics are an important tool on our farm and we use them sparingly and with respect.  If a pig gets sick, which is rare, we want it to get better and not get other pigs sick.  To us, this is the definition of treating our pigs humanely.  In this case we will follow the recommendation of our veterinarian and administer antibiotics instead of letting the pig suffer. 

 

We do not use artificial growth hormones on our farm.  Our pigs do just fine without them.

Buying Pork from Us

WHAT IS THE COST?

We charge a flat $250 per pig.

You will pay us directly once we deliver your pig to our local meat locker.

The butcher has his own cost (per lb) for processing. 

You pay the butcher when you pick up your meat.

Approx. $0.80/lb carcass weight + $40 fee to slaughter. A 280 lb pig will have a carcass weight of approx. 210 lbs.

Extra cost for curing ham & bacon, ground sausage/links

For example:

butchering cost : ($0.80 x 210 lbs) + $40 + extras $50ish

                                                                           =$258.00

$250 pig + $258 processing = $508.00 total

 

157 lbs take home meat costs approx: $3.22/lb

HOW MUCH MEAT WILL I GET?

A whole hog will get you between 3-4 laundry baskets full of meat. (ready to pick up frozen at your local meat locker)

You have the option of ordering a half hog (to be split with someone else). Either you set up who you will share with or we can find someone who will share with you.

 

Either way, you order your half just the way you'd prefer.

It may be anywhere from 3-6 months for your pig to be ready for market.  We will contact you when the pig is ready for market to confirm your order.  We appreciate your patience as we build up our supply of Berkshire pigs.

Step 2 - Choose your custom butchering options. 

How do you want your pork processed?

Looking at the diagram on the right, decide how you want your pork cut and packaged? If you aren't sure, the butcher will walk you through it.

*This step isn't necessary until we have confirmed your order and delivered your pig to the meat locker.

Jones Meat & Locker will accept cash, check or credit card as payment options.

COMMON QUESTIONS...

If I pay for 210lb carcass weight, why am I only bringing home 157lbs of meat?

Great question! The "waste" from the carcass adds up (about 25%) in bones, feet, inedible organs, etc) You wouldn't want that anyway, but the processor still has to handle all that weight, so they charge for the whole carcass weight.

Can I get all of my pork in Pork Chops and Bacon?

Sadly, no. The diagram above shows you the break down of the pork carcass.

Here's a sample of what you could bring home: (whole hog)

30 pork chops, bone-in or boneless, you choose how many per pkg.

20 lbs of bacon, packaged according to your liking 1lb or 2lb

2 tenderloin roasts

2 babyback ribs* (if you choose boneless chops)

10 lbs breakfast sausage links

26 pork burgers, you choose how many per pkg.

10 lbs brats

10 lbs fresh sausage

24 pork shoulder steaks

2 pork shoulder roasts

12 pork cutlets

2 smoked ham roasts* (if you do not want ham, you'll have more ground pork for sausage, brats, patties, ground pork, etc)

6 packages of soup bones
